  • 1-1/2 cups arborio rice
  • 4 cups vegetable broth warmed
  • 1 small onion finely diced
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • ½ cup dry white wine optional, or substitute with more broth
  • Zest and juice of 1 large lemon
  • ½ cup Parmesan cheese grated
  • 2 tbsp butter
  • 1 cup fresh basil leaves chopped
  • Salt and pepper to taste
  • Extra basil leaves and lemon slices for garnish

Instructions
 

Prepare Broth

  • Warm the vegetable broth in a saucepan over low heat and keep it warm while making the risotto.

Sauté Aromatics

  • Heat olive oil in a large skillet or saucepan over medium heat.
  • Add the onion and garlic, cooking until softened and fragrant, about 3-4 minutes.

Toast the Rice:

  • Stir in the arborio rice and cook for 1-2 minutes until slightly translucent around the edges.

Deglaze the Pan

  • Add the white wine (if using) and cook until mostly absorbed.
  • If not using wine, skip to the next step.

Add Broth Gradually

  • Add 1 ladle of warm broth to the rice, stirring frequently until absorbed.
  • Repeat this process, one ladle at a time, until the rice is creamy and tender, about 18-20 minutes.

Incorporate Flavors

  • Stir in the lemon zest, juice, butter, Parmesan, and chopped basil.
  • Season with salt and pepper to taste.

Serve

  • Divide the risotto into bowls, garnishing with fresh basil leaves and lemon slices.
  • Serve immediately.
