Instructions
Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Prepare the Cookie Dough
In a large bowl, combine pumpkin puree, sugar, vegetable oil, egg, and vanilla extract.
Mix well.
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes.
Let cool for 5 minutes before transferring to a wire rack to cool completely.
Make the Cream Cheese Frosting
Beat softened cream cheese and butter until smooth.
Gradually add powdered sugar, vanilla extract, and salt.
Mix until creamy.
Frost the Cookies
Spread a generous amount of cream cheese frosting on each cooled cookie.
Sprinkle with cinnamon or chopped pecans if desired.
