Prepare the Cookie Dough In a large bowl, combine pumpkin puree, sugar, vegetable oil, egg, and vanilla extract.
Mix well.
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
