Cookies

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt

Cream Cheese Frosting

  • 8 ounce cream cheese softened
  • ¼ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Prepare the Cookie Dough

  • In a large bowl, combine pumpkin puree, sugar, vegetable oil, egg, and vanilla extract.
  • Mix well.
  • In another bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Bake the Cookies

  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes.
  • Let cool for 5 minutes before transferring to a wire rack to cool completely.

Make the Cream Cheese Frosting

  • Beat softened cream cheese and butter until smooth.
  • Gradually add powdered sugar, vanilla extract, and salt.
  • Mix until creamy.

Frost the Cookies

  • Spread a generous amount of cream cheese frosting on each cooled cookie.
  • Sprinkle with cinnamon or chopped pecans if desired.
