Whipped Feta Cucumber Bites
These little bites are proof that you can be light, bright, and still absolutely addictive. Creamy whipped feta sits atop crisp cucumber rounds, topped with a drizzle of honey and a sprinkle of crushed nuts. They look fancy. They take five minutes. They will disappear.

Ingredients
- 1 cucumber large
- ½ cup feta crumbled
- 3 tbsp Greek yogurt plain
- 1 tsp lemon juice
- 1 tbsp olive oil
- 2 tsp honey
- pistachios or walnuts crushed - for topping
- Fresh dill or mint (optional, for garnish)
- Salt & pepper to taste
Instructions
- Slice cucumber into thick rounds and lay them out on a platter.1 cucumber
- In a small bowl, whip feta, Greek yogurt, lemon juice, olive oil, salt, and pepper until smooth.1/2 cup feta, 3 tbsp Greek yogurt, 1 tsp lemon juice, 1 tbsp olive oil, Salt & pepper
- Pipe or spoon the feta mixture onto cucumber rounds.
- Drizzle each with honey, sprinkle crushed nuts, and add herbs if using.2 tsp honey, pistachios or walnuts, Fresh dill or mint
- Serve immediately and prepare for compliments.
Notes
- Make it spicy with a pinch of red pepper flakes.
- Works beautifully on mini toasts or crackers too.
